Candied Sweet Potatoes

Uncle A’s Candied Sweet Potatoes!
These orange pieces of goodness are so easy, yet so tasty! You can use cinnamon, or try them with my Uncle A’s Asian Seasoning for even more flavor!
5-6 large Sweet Potatoes
12 tablespoons unsalted butter melted
1/2 cup maple syrup real maple syrup, not pancake syrup
2 cup dark brown sugar light brown sugar also will work
1 teaspoon Uncle A’s Asian Seasoning (or cinnamon)
2 teaspoon vanilla extract
1 teaspoon salt
Preheat oven to 380’F. Spray a baking dish with nonstick cooking spray and set it aside
Rinse the sweet potatoes and then peel them into ¾” – 1” slices. Try to cut them the same zie so they cook evenly!
In a medium bowl, combine brown sugar, melted butter, maple syrup (REAL maple syrup, not pancake syrup!), Uncle A’s Asian Seasoning, vanilla extract, and salt. Whisk until smooth and silky!
Transfer the sliced sweet potatoes to the baking dish and spread evenly
Slowly, and lovingly, drizzle the brown sugar mixture over the top of the sweet potatoes and toss to combine. You want each piece of sweet potato coated in the mixture.
Cover the dish with tinfoil and bake for 25 minutes.
After 25 minutes, remove foil and gently flip the slices over and baste with the sugary liquid!
Bake for another 10 minutes (no foil) and again, baste the potatoes.
Check to see how tender the sweet potatoes are, and if still hard to the touch, bake for another 5 to 10 minutes, depending on the size and thickness of your potatoes. Please make sure they are tender (but not falling apart) before removing them from the oven!
Let sit for about 5-8 minutes before serving! Enjoy!
