Uncle A’s Devil Bird
Spicy Italian Chicken Sandwich

Description
The Devil Bird is a spicy Italian chicken sandwich built in layers of heat and flavor. Crispy chicken cutlets are crusted with Calabrian chili, Parmigiano-Reggiano, and lemon zest, then topped with warm prosciutto and spicy capicola. Peppery arugula and a bold Calabrian chili aioli bring brightness and fire, all tucked inside toasted hoagie rolls rubbed with fresh garlic.
The heat builds gradually: the chili crust, the capicola, and the aioli. The arugula cuts through it all.

Ingredients
The Sandwich
2 hoagie rolls, split and toasted
2 chicken breasts, pounded thin
4 slices prosciutto
4 slices hot capicola
2 large handfuls fresh arugula
Chicken Breading
1 cup breadcrumbs (plain or panko)
½ cup Parmigiano-Reggiano, finely grated
1 tsp Calabrian chili flakes
1 tsp smoked paprika
Zest of 1 lemon
Salt and black pepper
2 eggs, beaten
½ cup flour
Olive oil, for frying
Calabrian Chili Aioli
½ cup mayonnaise
2 tbsp Calabrian chilies in oil, chopped
1 clove roasted garlic, mashed
1 tsp red wine vinegar
Black pepper to taste
Arugula Dressing
1 tbsp extra-virgin olive oil
Juice of ½ lemon
Pinch of salt

Method
1. Make the Aioli
Combine mayonnaise, Calabrian chilies, roasted garlic, red wine vinegar, and black pepper. Mix well and refrigerate until ready to use.
2. Bread the Chicken
Pound chicken breasts to an even ¼-inch thickness between plastic wrap.
In a shallow bowl, mix breadcrumbs, Parmigiano, Calabrian chili flakes, smoked paprika, lemon zest, salt, and pepper.
Set up a dredging station:
Flour → Egg → Spiced Breadcrumbs
Coat each cutlet in that order, pressing the breadcrumbs firmly onto the chicken.
3. Fry the Cutlets
Heat about ¼ inch of olive oil in a skillet over medium-high heat until shimmering.
Fry the cutlets 3–4 minutes per side until deeply golden and cooked through.
Transfer to a wire rack. Immediately drape prosciutto slices over the hot cutlets so the heat gently warms the meat.
4. Dress the Arugula
Toss arugula with olive oil, lemon juice, and a pinch of salt just before assembling.
5. Build the Sandwich
Rub toasted hoagie rolls with a cut garlic clove while still hot.
Spread Calabrian chili aioli generously on both halves of the bread.
Layer in this order:
Crispy chicken cutlet with prosciutto
Hot capicola
Dressed arugula
Top with the second half of the roll and serve immediately.
