Roasted Beets, Blue Cheese and Pears!

Uncle A’s Beets & Blue Cheese Stacks with Caramelized Pears

Perfect for a stunning appetizer or meal!

Ingredients:

3 medium beets
1 large pear, sliced into thin rounds
4-5 oz’s blue cheese, crumbled
¼ cup pecans, chopped
1 tbsp butter
2 tsp Lyle’s Golden Syrup
Fresh thyme sprigs, for garnish

Instructions:
Prepare the Beets:
Preheat your oven to 350°F
Peel beets, cut off the ends and rub lightly with olive oil. Wrap each beet individually in aluminum foil and roast for about 45-60 minutes, or until tender when pierced with a fork.
Allow the beets to cool, then peel and slice into ¼-inch rounds.

Caramelize the Pears:
In a skillet over medium heat, melt the butter, add the pear slices and drizzle with Lyle’s. Cook for 2-3 minutes on each side, or until golden and caramelized. Remove from heat and set aside.

Assemble the Stacks:
In a round plastic tube, if you have one, place a slice of roasted beet, add a layer of crumbled blue cheese, then a caramelized pear slice. Repeat the layering with another beet slice, more blue cheese, and finish by topping with toasted pecans. Repeat the process to make multiple stacks.

Garnish and Serve:
Garnish each stack with fresh thyme sprigs.

Serve warm or at room temperature.
