Sticky Orange Crispy Pork

Uncle A’s Sticky Orange Pork
Crispy fried pork tossed in a quick sweet, tangy and spicy orange sauce. This is an easy dish that tastes far more complicated than it is.
Ingredients
Pork
- 1 lb pork, cut into bite-size pieces
- ½ cup all-purpose flour
- ½ cup cornstarch
- ½ tsp Uncle A’s Asian Nine-Spice
- ½ tsp salt
- ½ cup cold water, approximately
- Oil for frying
Sticky Orange Sauce
- ⅓ cup orange marmalade
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- ½ tsp Uncle A’s Asian Nine-Spice
Finish
- Fresh red and green chilies, sliced
Instructions
1. Make the batter.
Mix the flour, cornstarch, Uncle A’s Asian Nine-Spice and salt. Gradually stir in enough cold water to make a thick batter that will coat the pork.
2. Fry the pork.
Heat oil to 350°F. Coat the pork pieces in batter and fry in batches until golden brown and cooked through, about 3–5 minutes, depending on their size. Drain.
For extra crunch, increase the oil to 375°F and fry the pork a second time for 45–60 seconds.
3. Make the sauce.
Add the marmalade, soy sauce, rice vinegar and Uncle A’s Asian Nine-Spice to a small saucepan. Cook over medium-low heat for 2–3 minutes, stirring until melted, glossy and slightly thickened.
4. Finish.
Add just enough warm sauce to lightly coat the crispy pork and toss quickly.
Top with sliced fresh chilies and serve immediately.
Uncle A’s Tip
Sauce it at the last minute. The longer battered pork sits in sauce, the more crunch you’ll lose.
